Water is vital: Mineral content and purity play key roles in a brewery's ability to make certain styles consistently. Water is unique in every part of the world. Although Hawaii has some of the purest on our planet, duplicating a style of beer can often be impossible without knowing the exact make-up of a region's water supply.
Malt is the heart: In out Single-Infusion Mash Tun, starches are converted into sugars by steeping the barley in hot water. The Wort (sugary liquid) is then Sparged (rinsed) from the grain and gravity fed to the Brew Kettle where it is boiled.
Hops add personality: Throughout the boil, different types and amounts of hops are added at various times to provide the bitterness and/or floral aromas that impart flavors appropriate to the style of beer being brewed.
Yeast gives life: Yeast is Pitched (added) to the Wort once it has been cooled and transferred to the fermentation vessel. Yeast consumes the sugars, creating alcohol and carbon dioxide in the process. Beers are often filtered to remove the yeast, which can cause haze and hamper clarity. Yeast contains many of the B-complex vitamins, so unfiltered beer are essentially good for you.
